I’m about to rock your salsa world…

I know I’ve posted this before (see here), but this recipe deserves its own post.

Here’s what you need:

  • 1 bag cranberries
  • 1/2 cup sugar
  • 1 or 7 cloves garlic (depending on how brave you’re feeling)
  • 1 jalapeno , diced
  • 3 scallions
  • 1 handful of fresh cilantro, chopped
  • Juice of 3 limes
  • Salt and pepper to taste

Bring a pot of water to a boil and then toss the cranberries in. Boil them for 2 minutes. They’ll start to “pop,” but this shouldn’t concern you…just be happy this doesn’t happen when we sit in our hot tubs.

While you’re cranberries are soaking, start chopping everything else and tossing it into a bowl.

Beer

How did that get there? Not going to argue. Salud!

Then grab a bag of chips, another beer (if you’re so inclined), and head out to the pool! Enjoy your sweet and slightly spicy salsa, and get lost in 50 dark shades of cranberry 🙂
